Happy St. Patrick's Day!
Just a reminder that today is the last day to enter our Spice Collection Giveaway. See more details, below.
And without further ado.....
Leftovers!
As promised, we give yesterday's potatoes a glorious second chance, and a quick one, at that!
spinach artichoke souffle
garnished with cheese and bacon
To the leftover filling from yesterday's potatoes, whip in two whole eggs (by processor). Spoon into individual ramekins, top with cheese of your choosing, and a scatter of crisped bacon, and bake, in a 400 degree oven, until browned on top. (If cheese is browning faster than the souffle is cooking, cover with foil, and continue baking until warmed through.)
May neighbours respect you,
trouble neglect you,
the angels protect you,
and heaven accept you!

This looks delicious! With bacon to boot! I rec'd a gift of 4 lbs of it from my brother, can't wait to try this.
ReplyDeleteHey sweet Winnie!
DeleteBACON!!!!!!
Okay, I'ma stop that now. But do I EVER love bacon. Funny thing is, I hated it until only a few years ago.
Bacon rocks my world, now. Now that my metabolism isn't rocking so much. lol
Thanks so much for dropping by!
This looks amazing! Definitely adding this to my idea list for this spring...if spring ever arrives! Though, I think I would use chevre instead of cream cheese, or maybe ricotta...and beautiful photos, as usual. :)

I would LOVE the chevre in this. Ricotta, too. If you try it, I'd love to hear how it comes out.
