Can't resist a Mimosa.
A favorite way to ring in the New Year, a Mimosa is simply orange juice and champagne. Two of my favorite things! This classic is well and good all on it's own.....but if you'd like to shake things up a bit (and we always enjoy shaking things up a bit) why not try a few other citrus juices? And perhaps Italy's Prosecco, or Spain's Cava would be nice in exchange for Champagne. For a non-alcoholic version, try (a lemon or lime flavored? or simply plain) sparkling water, as a substitute for the alcohol.

The blood-orange juice turns what would ordinarily be a mimosa into a lovely ruby-tinted cocktail perfect for any Fall wedding! Or the occasional brunch...Every. Sunday. Morning.
Serve punch-style!
The following recipe serves 10 to 12.
Ingredients
2 1/4 cups freshly squeezed or frozen blood-orange juice
2 750-ml bottles champagne, chilled
Directions
Pour 3 tablespoons juice in each champagne flute. Fill flutes with champagne, and serve.

I saw something on pinterest a few days ago, with the idea of having a mimosa bar at a party, offering up champagne with various juices and fruits. I love a good mimosa too, but all these new ones have got me wanting one all the time!Blood orange sounds heavenly.
